My (now) fiancé celebrated his 53rd birthday on the 2nd day of our EPIC road trip and family vacation. I knew that I would not be able to arrange a celebration with his children prior to our departure, so I decided to make, decorate a freeze a mini cake to take with us! It worked out perfectly!

My fiancé is not particularly fond of sweets and baked goods (GASP! I know! This is nearly a crime for someone who loves to bake and create! However, in the big picture, this is a priceless quality!

  1. It helps to prevent excessive additions to my hip and waist which constant temptations would certainly encourage those results.
  2. When he samples my work, I never need to question the authenticity of his reactions and opinions.

I know that he enjoys most anything with bananas, so I decided to make a banana cake with a cream cheese swiss meringue buttercream. I have made my mother’s banana bread recipe countless times, but I have never made a banana cake…never mind a gluten free one!

I chose to make a 5″ miniature cake with 3 layers to make it as transportable as possible. I made and decorated the entire cake, placed it in a 6″ square clear cake box, and reinforced the bottom with cardboard. I placed the decorated cake (and cake box) in our large freezer several days before we were scheduled to leave for our trip.

Gluten Free Miniature Banana Cake for Birthday Celebration while on vacation!

Our trip was planned to be two weeks in length and finding affordable (and tasty!) gluten free meals are challenging to find on the road. I planned, prepped and froze a variety of easy gluten free meals to be taken with us, and I purchased several pounds of dry ice to ensure everything would reach our destination while remaining frozen. Everything was layered in a large Igloo cooler with dry ice, cardboard and newspaper, and then zip-tied closed.

I was delighted when I opened the cooler and saw that EVERYTHING was still frozen. The cake was placed in the refrigerator to defrost. Scott was surprised and delighted when I pulled out the miniature cake and couldn’t believe that I had managed to bring an entire decorated cake 1,000 miles! The cake was the *perfect* size to slice into 8 equal portions for everyone to enjoy, without the need for any leftovers!

So, if you have a birthday to celebrate while away on a vacation, you can successfully bring one with you with these simple tips!

  1. Bake and decorate cake (at minimum) several days in advance of departure.
  2. Securely place cake in a (reinforced) cake box that is proportional to the size of the cake. Place cake and box in freezer.
  3. Purchase appropriate quantity of dry ice from your local distributer. (I bought 10 lbs).
  4. Line cooler with cardboard to protect cooler from contact with the dry ice, then place frozen cake (in box) at bottom of cooler and pour dry ice around the box.
  5. Use additional cardboard and crumpled newspaper to fill remaining voids and seal cooler. Open cooler upon arrival at destination, defrost cake, and CELEBRATE!
